Rewritten every Monday

The Table.

The ledger below is this week's, written Monday morning after the walk round. Dishes leave when a bed is done and not before a replacement earns its place.

Lunch, Thursday to Sunday

  1. The picking salad

    Bed 05, picked at ten

Whatever is perfect today, dressed at the table

  2. Courgette flower and curd

Bed 06, flowers cut at dawn

Stuffed, fried, pine nuts and honey

  3. Beetroot in its own leaves

    Bed 02, sown 11 April

Baked in a leaf parcel, horseradish snow

  4. Padrons from the glass

    Glasshouse, picked green

    Blistered, smoked salt, nothing else

The evening sitting, Friday and Saturday

  1. Onion broth, burnt leeks

    Bed 01, lifted Friday

A year of alliums in one bowl

  2. Sweetcorn, first pick

    Bed 08, picked at six

Grilled in the husk, brown butter, marigold

  3. Artichoke, aged cheese

    Bed 09, third year plants

    Hearts roasted, leaves for dipping

  4. Tayberries and meadowsweet

    Bed 04, the soft wall

Warm from the wall, cold cream

The ledger is fictional. In a real build these rows come from the restaurant's actual menu, and change when it does.

Wine is chosen the same way as the vegetables: small growers, honest years, nothing that needs a speech.
